Christmas Turkey, Goose or Guinea Fowl with Fresh Black Truffles
Serves 4
Ingredients:
- 1 large turkey, goose or guinea fowl
- 2 oz Fresh Black Italian Truffles
Method
- Have the fresh Truffle using a Truffle shaver, and using a sharp knife, make small incisions under the skin of the bird.
- Loosen the skin and smear with a good quality extra virgin olive oil.
- Take 40g of the Black Truffle shavings, and carefully insert into the various incisions.
- Roast the bird in the oven in the usual way, using a cooking time as appropriate for the size.
- Serve with all your favourite traditional Christmas trimmings.
- To complete the Truffle effect, shave the remaining 0.5 oz of fresh Truffles onto Roast or Boiled Potatoes as they are served at the dining table.
